Raw Chocolate Nut Tart

Ingredients: makes 12

Base:

1 cup of pitted dates (cheap dried ones are better) 

1/2 a cup of raw walnuts 

1/2 a cup of raw almonds 

1/2 a cup of roasted salted cashews 

1/4 a cup of cold pressed organic coconut oil 

Topping: 

1 packet of Pico 85% Dark Chocolate (vegan) I buy this from Gilbert's. Or you can use 1 cup of dark chocolate melts if you are not fussy about dairy or a little extra sugar. 

1/2 a cup of cold pressed coconut oil 

1/2 a cup of cacao powder 

You will also need some silicone cup cake molds. 

Method:

  1. Melt down your coconut oil in a double boiler of place the glass jar into a hot water bath.

  2. Place all of the nuts and dates in a food processor or good blender and crush until a moist crumb is achieve. Tip: Don’t process too much that all of the oils come out of the nuts.

  3. Then mix the bits and dates with the 1/4 a cup of coconut oil.

  4. Press the nut base into the silicone moulds.

  5. Then using a double boiler melt down the chocolate, then use a silicone spatula to mix through the coconut oil and cacao.

  6. Add a small pinch of pink sea salt and mix again.

  7. Then pour the raw chocolate on top and set in the fridge for a few hours before you eat and are taken to healthy treat heaven.
