Spiced Carrot & Coconut Soup

 

Ingredients: Serves 4

400 grams of carrots 

500 grams of butternut pumpkin 

1 by 400 gram can of coconut milk

1 brown onion

1 clove of garlic 

2 tablespoons of turmeric 

1/2 tablespoon of ground cumin 

2 tbl of organic cold pressed coconut oil 

Fresh bunch of coriander (garnish)

1/2 a cup of roasted salted cashews

3 scoops of Boomers WPI (optional but required if you would like to hit our suggested protein target of 25 grams per serve)

Method:

  1. Chop half of the carrots into discs.

  2. Chop the pumpkin into chunks.

  3. Place the pumpkin and chopped carrots into a pot and just cover with water.

  4. Peel the garlic cloves. Crush the cloves and chop finely. Add the chopped garlic to the pot.

  5. Bring the pot to a boil and drop to a simmer. While this happens use your time to grate the rest of the carrots.

  6. Dice up the onion

  7. In a fry pan on med-high heat, melt down the coconut oil. When the oil is hot, brown off the onion.

  8. Fry the grated carrot with the onion - when both the onion and carrot are brown - push them to the sides and place the turmeric and cumin in the center, then mix it through working from the sides to the middle. Drop to a low heat and add the coconut cream. Allow this to simmer.

  9. Check the pot of carrots and pumpkin. Once tender and soft, blend it to a smooth consistently using a blending stick or food processor. You do not need to drain the water.

  10. Once the carrots and pumpkin are blended smooth, you can add the spiced carrot & coconut mix from the fry pan to the pot and keep it simmering away, so that flavors infuse.

  11. Separate the coriander, finely chop half of the bunch using the leaves and the green part of the stems. Add to the pot.

  12. Separate the remaining coriander leaves to use as a garnish.

  13. Mix the boomers protein powder through and serve with coriander on top.

** Please note the protein powder is only necassary if you need to consume a higher protein diet.

Facts: The perfect dish to boost immunity and fight off any signs of a virus, high in vitamin C and Cur-cumin which is the main active ingredient in turmeric. Curcumin has powerful anti-inflammatory effects and is a very strong antioxidant helping to protect against infection, inflammation and free radicals.
