Apricot, Nut & Seed Granola

Ingredients: Serves 10
100 grams of dried apricots

60 grams of shredded coconut

85 grams of pepita seeds

50 grams of chia seeds

100 grams of almonds, slivered, flaked or chopped raw

150 grams of pecans roughly chopped

60 grams of maple syrup

20 grams of honey

Split into 10 serves.

Serve one serve with 160 grams of Chobani Plain yoghurt and 4 strawberries.

Method:

  1. qPreheat the oven to 170 degrees.

  2. Dice the apricots into small chunks.

  3. In a large mixing bowl, mix all the dried ingredients together. Pour the maple syrup over the nuts, dried fruit and seeds. Toss through the mixture to coat as evenly as possible. Line a baking tray with baking paper and cover with the granola mix, then drizzle with the honey.

  4. Place in a preheated oven, stirring after 10-15 minutes and then bake for another 5-10 minutes until evenly browned or toasted as much as you like.

  5. Remove from the oven. Once cool store in an airtight container.

Notes:

Serving size is calculated on 10 serves. Weigh your full batch and then split into 10 even serves in zip lock bags.
