Hemp Seed Super Salad

Ingredients: serves 1

2 tbl of hemp seeds

½ a tbl of hemp seed oil (or use extra virgin olive oil)

½ a tbl of olive oil

1 pinch of sea salt

1 small to medium zucchini

Handful of fresh parsley finely chopped 

¼ of a red onion finely diced

200 grams of butternut pumpkin

50 grams of avo (1/4 of a large one or ½ a small)

1 lemon

Method:

  1. Pre-heat the oven to 180.

  2. Peel and dice the pumpkin, drizzle with the olive oil and season with the sea salt. The place it on a roasting tray with baking paper and roast for 30 minutes.

  3. While the pumpkin roasts dice the zucchini into small chunks, finely dice the red onion and roughly chop the parsley.

  4. Place the zucchini, onion and parsley into a bowl, then add the juice from the lemon and hemp seed oil and toss well.

  5. When the pumpkin is cooked place it in the salad bowl and toss.

  6. Then add one tbl of the hemp seeds and toss again.

  7. Serve on a plate with the remaining hemp seeds sprinkled on top and enjoy for healthy nourishing lunch or light dinner.

Facts: This meal is perfect for lunch and is known as a HFLC meal- high fibre and low calorie. It is perfect for when you don't feel too hungry or feel bloated and need a light meal. Pumpkin is perfect in salads because it is filling but much lower in carbohydrates and calories than sweet potato, teamed with fresh raw zucchini this dish is high in fibre and jam packed with micro-nutrients essential for immune function. Hemp seeds are a great source of protein and healthy fats and with a nutty taste and creamy crunchy texture they are great addition to any salad. If you want to boost the protein of the meal to make it more filling, simply add 50 grams of cooked chicken, tofu or prawns and you will have a meal that contains more than 25 grams of protein and is less than 450 calories.
